A Legacy of Freshly Roasted Coffee in Sanborn, NY
Buffalo Coffee Roastery is more than a coffee shop—it’s a cornerstone of Western New York’s specialty coffee scene. Founded in 1994 by Kate and Sean Edwards, the roastery brought a fresh vision to Sanborn, NY: coffee that’s roasted on-site, served fresh, and rooted in tradition. Long before coffee culture boomed in the region, Buffalo Coffee Roastery was already perfecting the art of small-batch roasting.
The Pioneer of On-Site Roasting in Western New York
What truly set this roastery apart from the beginning was their bold decision to roast coffee in-house. Using a 12-kilo San Franciscan coffee roaster, Kate learned the craft from her sister in California and brought that West Coast expertise back east. For over 18 years, she honed the roasting process—developing signature blends and refining profiles that balance flavor, aroma, and body. Customers could walk in and witness the roast in action—an immersive, sensory coffee experience that remains rare to this day.
Freshness You Can Taste, Tradition You Can Trust
At Buffalo Coffee Roastery, freshness is the foundation. Each batch is carefully roasted on-site, ensuring peak flavor and full-bodied character. Whether you prefer dark, bold blends or something smoother and more balanced, there’s a roast to match every palate. Their approach is personal, their equipment is artisanal, and their flavor is unmatched.
The shop’s welcoming ambiance and nostalgic charm offer the perfect backdrop for sipping a cup of coffee that’s as rich in history as it is in taste. Whether you're a local or visiting the area, it's easy to feel at home here.
Locally Rooted, Community Loved
This Sanborn staple continues to thrive thanks to strong community ties and a commitment to quality. Kate and Sean's dedication to their craft has inspired a loyal following, from longtime residents to first-time visitors looking for authentic, handcrafted coffee. Their café is more than just a stop for caffeine—it’s a gathering place, a conversation starter, and a part of local identity.
